Role: Fine Dining Head Waiter
Location: Dunbar, Scotland
Salary: up to £27,000

Achieve Hospitality are delighted to be supporting our fantastic client who are a luxury property based near the Dunbar area.

The Head Waiter/Waitress will assist the Restaurant Manager in the daily operations of the restaurant, ensuring smooth service delivery and creating an exceptional and memorable dining experience for our guests.

Key Responsibilities:

  • Lead your section to ensure a seamless and efficient dining experience
  • Collaborate with the team to support and develop all aspects of the business.
  • Guide, train, and inspire the F&B team to excel in their roles.
  • Provide guests with an exceptional dining experience, assisting with menu choices enthusiastically and informatively.
  • Maintain a professional, friendly, and courteous attitude towards guests and colleagues.
  • Ensure timely and effective delivery of food while maintaining quality throughout the service.
  • Manage the cleanliness and readiness of all equipment and Mise-en-place.
  • Prepare and serve beverages and condiments promptly.
  • Keep all back-of-house areas clean and tidy at all times.
  • Attend briefings before each service period.
  • Have thorough knowledge of the food and beverage menu items.
  • Maintain high standards of cleanliness and presentation for furnishings and table setups.
  • Be flexible and perform any other reasonable duties as assigned, including redeployment to other departments as needed.
  • Inform managers of guest comments or requirements that you cannot resolve immediately.
  • Adhere to all Health & Safety, Emergency, Fire, and Hygiene procedures according to company policy and government regulations.
  • Maintain high personal cleanliness, hygiene, and grooming standards.
  • Ensure proper handover at the end of your shift.
  • Maintain the highest standards of service and presentation throughout restaurant and bar service periods.
  • Communicate consistently and effectively with all departments to ensure smooth F&B service.
  • Confidently handle cash procedures and resolve any discrepancies with accounts promptly.
  • Proficiently upsell and encourage team members to do the same.
  • Actively manage the floor, building rapport with colleagues and guests.
  • Promptly and effectively manage guest recovery situations and communicate updates.
  • Support management with stock takes and organisation.
  • Contribute ideas and initiatives to improve service quality and increase revenue.
  • Assist in training new team members.
  • Provide regular feedback and recognition to team members.

Knowledge & Capabilities:

  • Confident in managing your section professionally and with ease.
  • Strong organisational and leadership qualities.

  • Ability to work well under pressure in a fast-paced and changing environment.

Proven Experience/Qualifications:

  • Minimum of 2 years’ experience in a fine dining/Michelin environment.
  • Strong beverage and food knowledge.
  • Experience, knowledge, and understanding of the luxury hospitality industry
