Location: Co.Kerry, Ireland
Salary: €60,000– €63,000
We are working with a valued client of ours who is looking for an experienced Director of Food & Beverage. This is an exciting opportunity to work with one of Kerry’s most beautiful 5* hotels.
The Director of Food and Beverage will be responsible for leading and managing all aspects of the food, beverage and wine offering at the Hotel and Golf Club. We are looking for a passionate manager that has excellent food, beverage and wine knowledge, attention to detail, is standard driven and who can lead the team and manage the financial aspects and objectives of the department.
The Director of Food and Beverage will report directly to the General Manager. Candidates MUST have the right to live and work in Ireland – we do not offer visa sponsorship. There is no accommodation provided.
Key Responsibilities:
- To oversee and ensure that all the objectives are met in the food & beverage department under the key result areas of
- 1. Business development
- 2. Financial performance and objectives
- 3. Overall quality & standards
- 4. Day to day operations in each outlet
- 5. Culture, team development, engagement, and retention.
- 6. Customer service and satisfaction.
- Lead all facets of the food & beverage operations in the hotel and golf club, including three restaurants, bars, private dining rooms, lounges, fine dining, room service, private events and weddings, ensuring 5* quality excellence in both presentation and service.
- To be commercially aware and focused on revenue generation and cost control in food & beverage across the company.
- Work closely with the senior leadership team on the overall strategy of the food & beverage department.
- Foster a culture and environment of continuous learning and development within the team.
- Work closely with HR to attract, hire, and retain the right talent.
- Have an ability to develop close relationships with suppliers in order to develop a local food & beverage offering.
- Continual assessment and update of existing SOPs, staff training and responding to customer satisfaction surveys.
- Be standards focused with the ability to inspire the food & beverage team to deliver the same standards.
- Use technology and systems to the departments advantage.
- Lead the food & beverage team on the management of stock and work closely with the executive chef.
- Ensure the food & beverage KPIs and gross profit margin each month.
- Managing payroll costs of this department.
- To organise the efficient operation of all food & beverage outlets in the hotel.
- Staff communication and training
- Further development of the department.
- Be a visible strong presence across the food & beverage outlets, mobilizing and providing direction to your departmental managers
- Work closely with the Sales and Marketing department including but not exclusive to providing content for promotional materials as required on an ongoing basis.
Must Demonstrate:
- Fluent level of English both verbal and written.
- Previous experience as a Director of Food & Beverage or assistant Director of Food & Beverage within a similar luxury five-star service and product environment, including fine dining for a minimum of 2 years.
- Extensive knowledge and experience of food, beverage, and wine service at 5 * level.
- Experience in weddings and events food & beverage service.
- Excellent attention to detail, interpersonal and organisational skills, strong leadership, and people management skills.
- An understanding and experience of operational controls, budgeting, payroll, forecasting, inventory control, managing GPs, wages and profit and loss management for the overall food & beverage department.
- Can demonstrate a proven track record of achieving financial objectives on all food & beverage objectives and KPIs, responsibility for the business.
- Hospitality Management qualification or equivalent.
- A proven track record of improving standards and procedures in the food & beverage department through continual assessment and update of existing SOPs, staff training and responding to customer satisfaction surveys.
- Proven track record in meeting the expectation of a high-end leisure market guests – Individual as well as incentive-based guests.
- Proven track record regarding problem solving.
- Has a stable and progressive career to date to director of food & beverage through similar quality orientated operations.
- Excellent presentation and polished manner with faultless customer service skills and attitude.
- Excellent IT Skills including a proficient user of MS Office and excel.
- Ability to show a positive attitude towards guests and colleagues at all times.
- Self-motivated and able to work alone with good personal organization.
Desired:
- Experience and understanding of 5 Star standard, the Relais & Chateaux brand, Irish regulations, and requirements.
- Knowledge of Volante system is an advantage.
