Role: Brasserie Manager
Location: Kenmare, Co. Kerry, Ireland
Salary: €45,000 circa (Dependant on Experience)
Work Schedule: Full Time, Permanent 
Accommodation: Temporary Available if Required
Start Date: As soon as possible
 
Achieve Hospitality are partnering with with one of County Kerry’s most beautiful 5* hotels who are keen for an experienced Brasserie Manager to join and lead their front of house team.
 
As a member of the management team, the Brasserie Manager is instrumental in developing and fulfilling the tactical as well as strategically requirements for the Brasserie & Bar and executing the F&B philosophy. You will be responsible for creating an atmosphere and culture that will inspire guest to return and team members to remain. 
 
 
Role Responsibilities:

  • Understand completely all policies, procedures, standards, specifications, guidelines and training programs.
  • Ensure that all guests feel welcome and are given responsive, friendly and courteous service at all times.
  • Achieve company objectives in sales, service, quality, appearance of facility and sanitation and cleanliness through training of employees and creating a positive, productive working environment. 
  • Control cash and other receipts by adhering to cash handling and reconciliation procedures in accordance with restaurant and hotel policies and procedures.
  • Fill in where needed to ensure guest service standards and efficient operations.
  • Continually strive to develop your team in all areas of  professional development.
  • Prepare all required paperwork, including forms, reports and schedules in an organised and timely manner.
  • The stock management and stocktake.
  • Ensure that all products are received in correct unit count and condition and deliveries are performed in accordance with the brasserie and hotels receiving policies and procedures.
  • Oversee and ensure that food & beverage and brasserie policies on employee performance appraisals are followed and completed on a timely basis.
  • Schedule team members as required by anticipated business activity.
  • Staff communication and training.
  • Be knowledgeable of food & beverage policies regarding personnel and administer prompt, fair and consistent corrective action when required. 
  • Develop the overall business and product & ensure constant delivery of the highest in standards of customer service in the Brasserie.
  • Build a relationship with the client and be part of developing the brasserie further in terms of service and business development. 

 
Candidate Requirements: 

  • You will have experience in a similar role.
  • 2+ years experience in a similar role as an established manager/head of department.
  • Proven experience in leading a F&B team.
  • Excellent IT Skills including a proficient user of MS Office and excel.
  • Exceptional attention to detail, organisational, negotiation and communication skills are a must including fluent spoken and written English.
  • All applications must demonstrate previous experience in a similar role in a busy food and beverage environment and proven ability.
