Overview and Opportunity
Achieve Hospitality are delighted to be partnering with a 5-star luxury resort in County Durham. With a 3 AA Rosette Restaurant, elegant rooms and suites and a Luxury Spa, they are keen for a Restaurant Manager to join their team.
Role Responsibilities:
- Ensure exceptional guest service in line with 5-star and 3 AA Rosette standards
- Oversee daily restaurant operations, ensuring smooth and efficient service
- Maintain high standards of cleanliness, hygiene, and health & safety compliance
- Recruit, train, lead, and motivate a professional front-of-house team
- Conduct regular staff briefings, performance reviews, and development planning
- Manage budgets, control costs, and analyse financial performance (P&L)
- Drive revenue through effective upselling, promotions, and guest engagement
- Ensure strict adherence to SOPs, brand standards, and quality benchmarks
- Collaborate with the Executive Chef and F&B management to ensure seamless service
- Coordinate with Events, Sales, and Marketing teams for promotions and private dining
- Handle guest feedback and complaints promptly and professionally
- Build strong relationships with regular and VIP guests, enhancing loyalty
- Act as a brand ambassador, representing the hotel’s values and luxury standards.
Candidate Requirements:
- Proven experience as a Restaurant Manager or Assistant Manager in a luxury hotel or fine dining environment
- Strong knowledge of 5-star service standards and AA Rosette or Michelin-level dining (desirable)
- Exceptional leadership, communication, and interpersonal skills
- Excellent understanding of food and beverage operations, including wine and pairing knowledge
- Demonstrated ability to lead and develop a high-performing team
- Strong financial acumen with experience managing budgets, cost control, and P&L analysis
- Ability to maintain composure and professionalism under pressure
- Experience with reservation and POS systems (e.g., ResDiary, OpenTable, Micros, etc.)
- In-depth understanding of health, safety, and food hygiene regulations
- Highly organised with a strong attention to detail and commitment to excellence
- Flexibility to work varied hours, including evenings, weekends, and holidays
- Passion for hospitality, service excellence, and guest satisfaction
- Relevant hospitality or management qualification (desirable)
